Healthy School Canteen Guide
Practical steps for running a school canteen that offers safe, balanced and appealing food choices for students every day.

Why the canteen is central to student health
For many students, the school canteen is where a meaningful portion of their daily food intake comes from, whether through a mid-day purchase, a snack break or a full meal. Because of this, the canteen is one of the highest-impact places for a school to influence healthy eating, often more so than a classroom lesson on nutrition. A canteen that consistently offers fresh, reasonably priced and appealing options makes the healthier choice the easy choice for students.
At the same time, canteens are commercial spaces run by vendors with their own cost pressures, which means schools need a clear, written approach to menus and standards rather than relying on informal understanding. A documented canteen policy protects both the school and the vendor by setting expectations upfront and giving everyone a shared reference point when questions arise.
Setting menu standards and vendor agreements
A good starting point is a written canteen policy that lists the categories of food the school wants to encourage, such as fruits, whole grains, dairy, and freshly prepared snacks, alongside categories it wants to limit, in line with the Food Safety and Standards (Safe and Wholesome Food for School Children) Regulations, 2020 relating to HFSS foods in and around schools. This policy should be shared with every vendor before a contract is signed, not introduced after complaints arise.
Vendor agreements can also specify basic hygiene expectations, such as food handler cleanliness, covered storage, and proper waste disposal, along with a review period during which the school checks that the agreed menu is actually being followed. Treating this as a living agreement, reviewed each term, keeps standards from slipping once the initial enthusiasm of a new policy fades.
Food safety and hygiene checks
Beyond what is on the menu, how food is prepared, stored and served matters just as much for student wellbeing. Schools should build a simple routine of hygiene checks covering food storage temperatures where relevant, cleanliness of preparation surfaces, handwashing facilities for canteen staff, and proper labelling of ingredients, particularly for students with known allergies. These checks do not need to be elaborate, but they do need to happen regularly and be recorded.
Aligning canteen hygiene practices with the expectations under the Eat Right School initiative and relevant food safety regulations gives schools a recognised reference point to work towards, rather than inventing standards from scratch. Keeping a simple log of checks, findings and corrective actions also makes it easier to demonstrate due diligence if a parent or authority raises a concern.
Making healthier choices appealing, not just available
Availability alone does not guarantee that students will choose healthier options; presentation, pricing and habit all play a role. Simple steps such as placing fruit and freshly prepared items at eye level, pricing balanced combo options attractively, and rotating menu items to avoid monotony can shift student preferences gradually and without any sense of restriction.
It also helps to avoid framing canteen changes around weight or body size. Messaging that focuses on energy for sports, concentration for classes, and variety in taste tends to resonate better with students than messaging tied to weight, and it avoids inadvertently stigmatising any student's body or eating habits.
Building a canteen program that lasts
A healthy canteen is not a one-time redesign; it requires ongoing menu review, vendor communication, hygiene monitoring and feedback from students and parents. Schools that treat the canteen as part of a broader nutrition program, rather than a standalone fix, tend to sustain improvements for longer because there is a clear owner and a regular review cycle.
